Spinach and Mushroom Tart

We instituted a weekly vegetarian night a few years ago in an effort to eat more veggies and decrease our consumption of animals. While intellectually I'd love to be a vegetarian on a full-time basis, because I do think we treat our food animals poorly and they contribute to global warming with their methane emissions, unfortunately, I'm a carnivore at heart. Therefore, I thought maybe following my intellectual ideals for at least one night a week might be a positive change.

However, finding vegetarian meals other than pasta that I will actually eat has been a real challenge, given that I hate vegetables in general, and like very few of them. I hate beans, broccoli, cauliflower, peas, eggplant, squash, and zucchini, all with a passion. I do eat carrots, spinach, corn, mushrooms, lettuce, cucumbers and peppers of any color. Do you see how vegetarian night might be a problem? Finally I found a recipe that fit all of my criteria for veggie night, due to an incompetent workforce at Fresh Direct. We get our groceries mainly via Fresh Direct, and they are not the best at packing boxes. Sometimes we don't get things we ordered, and sometimes we get surprises that we didn't order. A few months ago, they gave us a box of puff pastry dough. I wondered what the he#@ I was going to do with it until I ran across this recipe. Turned out to be a more useful surprise than the bag of Huggies Boys 3T pullups, which I gave away to friends.

Anyway, here is the recipe. The original recipe calls for an onion, but quite frankly, I'm a little turned off by too much onion in my food. I like just a tiny bit, and then prefer it pureed for the flavor, not the texture. This is the recipe as I adjusted, without the onion, and adding garlic and thyme, which was surprisingly tasty.

Mushroom Tart

Serves 4 - Prep Time 30 minutes - Total Time 45 minutes

Flour for rolling out puff pastry
1 sheet frozen puff pastry (from a 17.3 ounce package), thawed according to package instructions
1 TBSP olive oil
2 TBSP garlic, minced
Course salt and fresh ground pepper
2 packages (10 ounces each) mushrooms, trimmed and thinly sliced
1 (10 ounces) package fresh baby spinach
2 ounces soft goat cheese, crumbled
2 TBSP fresh thyme, chopped, or 1 TBSP dried thyme

Preheat the oven to 400 degrees F. On a floured surface, roll the puff pastry out to a 16x10 inch rectangle. Place the pastry on a baking sheet. With a sharp knife, lightly score the dough to form a 1-inch border. Using a fork, prick the dough inside the border every 1/2 inch. Bake until golden, rotating the pan once, about 15 minutes.

Meanwhile, in a large saucepan with a tight fitting lid, heat the tablespoon of oil. Brown the garlic, about 2 minutes. Add the mushrooms; cover and cook until tender and all liquid has evaporated, about 19 minutes. Fold in the spinach, season with salt and pepper. Cover and cook until wilted, about 5 minutes more. Drain any liquid.

Top the dough with the mushroom-spinach mixture. Scatter the goat cheese on top, and sprinkle with fresh thyme. Bake until the cheese is lightly browned, about 15 minutes.
